The aromatics come together and make a fragrant, tangy paste that flavors the potatoes that roast beneath the birds. If you can’t find Cornish hens, small chickens will do. Drizzle some olive oil over the hens and season well with sea salt and cracked black pepper. Crush some garlic cloves and scatter them over and around the hens. You can add thyme sprigs and rosemary, too. A two-step cooking method delivers plenty of flavor while keeping the meat moist.

Heat ¾ cup distilled white vinegar in a small saucepan over medium until just barely simmering; pour into a medium bowl. In a medium bowl combine oil, lemon juice, garlic, rosemary, salt, and pepper. Spread this mixture on the outside and inside the cavity of the hens. Bake the hens for minutes, or until a digital thermometer Cooking Games reads a temperature of 165°F and the potatoes are fork-tender. Transfer the hens to a serving platter and tent with aluminum foil for about 10 minutes before carving.

After that it’s a little like last Friday’s recipe—just shove it in the oven. Aside from butterflying the birds, follow the other directions to add herbs and season the hens. You can still brown the birds in a skillet, but do both sides. Instead of setting the birds on top of the rosemary and lemon, stuff those ingredients inside the birds instead. Roast per the same instructions, but know that it may take a few minutes longer to finish cooking.

Place hens on rack; roast at 425° for 30 minutes or until a thermometer inserted into thickest part of thigh registers 160°. Use an instant-read thermometer to ensure that it has reached the safe temperature of 165°F/ 74°C or higher in the center of the thickest part before serving. If you are using fresh herbs, place a small bunch of rosemary and/or thyme inside.

Turn the birds over and use kitchen shears to cut out their backbones. If you have hens with the giblets you will have to remove them from the cavity. You can read about How to Remove Giblets from Chicken here. You can prepare Cornish hens the same way you would prepare chickens.

The fresh scheme on offense should see him moved around the formation more, and keep him out of stacked box situations. If he can remain efficient on a floor of 250 carries and 50 receptions he should be in the top-5 consideration at his position. His final injury before this season happened in San Francisco on Nov. 28, 2021.

Mattison, on a per-touch basis last year, was just as efficient as Dalvin Cook. Plus, at 5’11” 220 to Cook’s 5’10” 209, it’s hard to tell them apart. Mattison is a priority handcuff for a reason. Like I highlighted, Cook is yet to get through a season in his first three years. Last year it would have been a good idea, but Mattison got hurt too.
